Healthy Grain Free Coconut Cookies

    Love cookies but want to cut on sugar and eat healthy? Great! I have a perfect recipe for you. These healthy coconut cookies are super easy to make. They are gluten – free, grain – free, dairy – free and what I am very happy about also sugar – free. Using dates as natural sweetener makes these cookies absolutely guilt – free. Yeyyy!!!
I like using dates in my recipes not only because of great flavor but also because they have plenty health benefits, they are rich in fiber and support brain function.
Remember to soak the dates in hot water for few hours before preparing cookie batter.

  • 1 ½ cup unsweetened shredded coconut
  • ½ cup chopped nuts (walnuts, hazelnuts)
  • ½ cup chopped dried prunes
  • ⅓ cup almond meal or other nut meal (walnut, hazelnut)
  • 8-10 dates (soaked and blended)
  • 4 egg whites


  1. Preheat the oven to 175°C and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk the egg whites until stiff peaks form. Then add almond meal and dates paste and whisk just until combined.
  3. Add in the shredded coconut, prunes, nuts and stir gently with a spatula.
  4. Form heaping 1-tablespoon size rounds of coconut mixture onto baking sheet and bake for about 18-20 minutes, or until golden brown. Remove from the oven and let it cool.
